Here we go!...
Pulled Pork Tortillas
You will need:
1 Pork Shoulder Joint
For the marinade:
1 tsp paprika
1 tsp garlic powder
1 tsp mustard powder
3 tablespoons of Drake’s Gold chilli sauce
1 tsp ground cumin
1 tsp oregano
1 tsp nutmeg
1/2 lime juice
A squirt of tomato paste
Salt and pepper
Plus: A bottle of dry cider A pack or 2 of tortillas 2 red onions Iceberg lettuce
If you are an organised individual then it's recommended that you mix all those lovely ingredients together and rub them into your pork joint ready to leave overnight.
If you'd prefer to get cracking, put the marinade into the bottom of the slow cooker with some onions, add the pork and coat the meat in the marinade.
Half a bottle of cider is then poured over the meat and the whole things is left on a low heat for 8-10 hours – with periodic checks to ensure nothing is drying out.
Once you are happy your patience has paid off, use two forks to start to pulling and shredding the pork, soaking up all the nice marinade and juices at the bottom of the cooker.
Serve with tortillas, tomato, salad leaves, pickled red onions. Keep the bottle of Drake’s Gold handy for adding that extra chilli kick.
The result?
Juicy pulled pork with complimentary hints of pineapple and the perfect level of spice.
The crisp lettuce adds the perfect texture to the soft, moistened meat, with the tortilla wraps offering the perfect vessel for soaking up the marinade flavour.
