You will need:

  • 1/4 cup unsalted butter

  • 1/4 cup all-purpose flour

  • 4 cups chicken or beef stock (homemade or store-bought)

  • 1/2 cup meat drippings (if you’re making a roast)

  • 1 teaspoon Ghost Ship chilli sauce (adjust to taste)

  • Salt and pepper to taste

Instructions for Ghost Ship Chilli Gravy

Note: If you’re roasting meat, collect the drippings from the roasting pan and set aside half a cup for the gravy.

Grab yourself a medium-sized saucepan and melt your unsalted butter over a medium heat.

Gradually whisk in the all-purpose flour to create a smooth roux; you should continue whisking constantly to avoid any lumps! After 2-3 minutes your roux should be a golden colour.

Slowly pour in your meat drippings, whisking continuously.

Whilst still whisking, slowly add your chosen stock to the mixture; this can be in the form of a stock cube to make life easier!

Bring the mixture to a gentle simmer over a medium heat and allow to cook for 5-7 minutes, or until the gravy thickens to your desired consistency.

Finish off by adding a dollop of Ghost Ship chilli sauce by Spice Island Chilli; you can start with one teaspoon, give it a taste and add more depending on your preference. You can then season the gravy with salt and pepper.

Remove from the heat and strain if you prefer a smooth consistency.

Alternatively…

Add 4-5 heaped tablespoons of gravy granules into a jug

Pour in ½ a pint of boiling water and stir until dissolved

Add in your meat juices

Add a dollop of Ghost Ship; start off with a teaspoon and see how you get on!
